松阪牛(まつさかうし)と言えば、和牛の最高峰です。そして和田金は松阪牛の元祖であり、頂点の店です。おひとり様の入店は不可なので、必ず二人以上で来てください。
和田金の店舗は、県道60号線・伊勢街道沿いにある五階建てのビルです。創業者の松田金兵衛(まつだ きんべえ)は、東京にある高級料亭の和田平(わだへい)で修業を積み、1878年に松阪で和田金を開業しました。
和田金の駐車場入り口は、ビルの向かいにあります。
信号のある交差点の付近にも、和田金の駐車場があります。写真の赤い輪の中が入口です。
ビル前の駐車場には、和風の門があります。
ビルの玄関です。最高の和牛を食べたいなら、ここを潜らなければいけません。
玄関のフロアーには、赤い絨毯が敷き詰められています。
玄関フロアーで受付を済ませると、エレベーターで客室まで案内されます。
客室の一室です。石灯籠が高級感を醸し出しています。
客室には漆塗りの大きな円卓があります。円卓の中央で炭火を熾して料理をする事が出来るという、非常に珍しい作りになっています。
円卓の下はこうなっています。炭火を扱うので、ある程度の深さが無いといけないようです。
客が席に着くと、仲居さんが菊炭(きく すみ)と呼ばれる最高級の樫の炭を燃やし始めます。和田金では、肉の調理に高い技術を必要とする為、仲居さんには厳しい試験が課せられています。
炭火に火が付いてしばらくすると、仲居さんが野菜と肉を盛り付けた皿を持ってきます。これは和田金の自社牧場で育てた、世界一の和牛リブロースです。
仲居さんが肉を焼いています。例え松阪牛肉であっても、素人が自分で肉を焼いたら最高の味にはなりません。
仲居(Naka i)が肉を焼き、砂糖をかける所までの動画です。
重厚な鉄鍋を炭火で加熱し、肉を置いて砂糖と醤油をかけ、少しだけ昆布の出汁を加えます。煮るのでも焼くのでも無い、最高の技術で肉の旨味を引き出します。
本物の「寿き焼き」を、溶き卵で食べます。絶対に他の店では経験できない、肉の柔らかさと美味しさを堪能してください！
「寿き焼き」には、御飯と漬物がつきものです。米は山形県産の「つや姫」で、何度でもお代わりが可能です。
最高の肉汁と油が残る鉄鍋で、最高の野菜、豆腐、シイタケなどを料理します。これが美味しくない訳がありません。
野菜を食べたら、また同じ方法で肉を焼きます。仲居さんは驚異的な技術で、肉や野菜が焦げ付かないように料理します。
肉が無くなると、玉ねぎを炒め始めます。肉汁を吸った玉ねぎは甘くておいしいです。
鉄鍋の残り汁と、残った溶き卵を御飯にかければ、世界最高のTKG(T=Tamago K=Kake G=Gohan)を食べられます。
和田金は、今も昔も日本中のグルメから愛されています。また、伊勢神宮(いせ じんぐう)への参拝を記念して「寿き焼き」を食べる人も居ますし、地元の人も祝い事があった時などに利用するようです。
